Suggested design height for the chevron is 4”. There is no backtracking. If you offset every other row to get the look in the third picture, adjust the height accordingly, taking into consideration the negative space in the center of the chevron.
Native Chevron has a few different options in pattern layout. The design comes as pictured in the second picture, to get the design in the first picture adjust vertical spacing. To get the design in the third picture, offset every other row.
